Greeting the new season with our banana nut bread
November is an exciting time on Harbour Island: It’s the beginning of our season. The time to greet our old friends and long-time winter residents. Yards are trimmed, fences painted, and houses fixed up for the rush of families making the journey south for pink sand, junkanoo music, and warm turquoise waters.
Eva is fixing up her booth with straw hats and farmers bags. Joe, Stanley, Vincent, and the other bonefishing guides are stringing the rods and painting the bottoms of their boats. And we’re plucking bananas from our own backyard for our tasty banana bread. If you can’t make it down to the bakery to try it, here’s the recipe:
Arthur’s Banana Nut Bread Recipe
3 C flour
1 1/2 C white sugar
1 tbs baking soda
1/2 C butter
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
5 very ripe bananas, mashed
1/3 C buttermilk
1 egg
1/4 C chopped walnuts or pecans
Mix together top seven ingredients. Add mashed bananas and mix
well for five minutes. Pour into two 8″ loaf pans or one 10″
bundt cake pan well greased. Top with nuts. Bake at 350° for
40 minutes.
